I had some zucchini, potatoes, sweet potatoes, onions, mushrooms and bell peppers on hand so I decided to shred them all up in the food processor, sauté them with olive oil, and season them with salt and cumin. The result was this tasty hash that I topped with egg. It was so delicious! And it was filling too, but not in a heavy, greasy way. I ate it for dinner that night, but kept the leftovers for lunch the next day. It was just as good on day two.
