It's been a while since I posted....In fact, I haven't posted anything since August. I've still been cooking, I just haven't had the time to take photos and post recipes. I've also been sticking to a lot of my tried and true recipes, and haven't really had the time to be adventurous in the kitchen. This school year is giving me a run for my money because I have a very low class, academically. They are super nice kids, but I'm spending more time than usual trying to program and lesson plan to meet all the needs. |

I had some zucchini, potatoes, sweet potatoes, onions, mushrooms and bell peppers on hand so I decided to shred them all up in the food processor, sauté them with olive oil, and season them with salt and cumin. The result was this tasty hash that I topped with egg. It was so delicious! And it was filling too, but not in a heavy, greasy way. I ate it for dinner that night, but kept the leftovers for lunch the next day. It was just as good on day two. |
