So I figured I should just continue with the sweet potato love fest while I continue to find new ways to use these awesome super-food root vegetables. This time I decided to use them in muffins. These make a great little snack or breakfast food. They are not too sweet or too dense, and were pretty easy to make. Check them out by clicking the title of this post or the "read more" link. |

I swear if I was a cartoon you would have seen my eyes pop out and stars circle my head. I was in heaven. And my mind instantly got to work.

Disclaimer: Look, I’ll say this first. Real food doesn’t come with a label, so really this post you’re about to read should be a moot point. However…even if you’re trying your darndest to eat the freshest, most local, most wholesome food nature has to offer…a package or two is bound to find its way into your grocery cart. If that’s the case, then read on. Most people understand that ingredients on a food label are listed in order of the weight they hold in that particular food item. For example, if "whole grain" is listed first, then "whole grain" is the ingredient that holds the most weight in that particular product. (Yay for whole grains!) And most people seem to know that added sugars are ingredients that should be avoided like the plague. No one, in their health-conscious minds would ever pick up a package that has "added sugars" listed as the first ingredient, would they? (Boo to added sugars!) But what if consumers didn't realize that "added sugars" really are the ingredients that hold the most weight in their particular food product? What if food manufacturers found a way to get around the "ingredients with the most weight" loophole and hide their added sugar content with cleverly labeled, and sneaky divide and conquer tactics? Click the title of this post or the “read more” link to find out the sneaky trick food manufacturers are getting away with.
What with my tan quickly fading, and those dreaded reports looming over my head, I decided to fix a quick snack that would make me at least feel like Spring is on the way, even though it's clearly not. Click the title of this post or the "read more" link to see how I made these quick and easy Vegetable Spring Rolls.

I started this blog after deciding to give up on fad diets, listening to “experts,” counting calories,
measuring, logging, depriving, bingeing, and feeling guilty. All of that only served to make me
bigger, unhealthier, and unhappy. I finally decided to keep it simple: listen to my
own body and eat real food. I
started cooking with ingredients as close to nature as possible and one year later I
feel healthier and happier. I love food and I love cooking it. This blog is an ongoing collection of my new
and favorite recipes. Some, I’ve made
up, but most are inspired by what I see online. Feel free to browse, follow, and leave a
comment! Thanks for reading! Follow Me on Pinterest!
