It's been a while since I've posted and with good reason. I was in Cuba!!! It was great to get away for the March break, and I thoroughly enjoyed the sun and sand. What wasn't great was....the food. It's true when they say that people don't vacation in Cuba for the food. The beaches are the most beautiful I've ever seen, and the people are super awesome. But the food is....well...whatever. Let's just say thank goodness for the eggs. (And chickpeas) In honor of eggs, I've got a quick and filling breakfast idea for you today. The whole thing takes less than 10 minutes to come together.
