With all the summer fresh vegetables from the garden that have been available lately, it’s been really fun coming up with interesting ways to use them. I came up with this quick and easy stuffed pepper dish the other day that makes use of fresh picked onions, zucchini, carrots, mushrooms, tomatoes and peppers, which are all in-season right now. My new favourite dessert!! There is seriously so much creamy goodness packed into these bite-sized slices of heaven. It's loaded with natural sweatness and healthy fats, from avocados, to dates, to homemade ricotta, nuts, and cocoa powder. But what it does NOT have is any flour, or refined sugar. There is also no baking involved. Yay! (Although you will have to chill it in the fridge for a few hours).
I wouldn't say this cheesecake is exactly a low-calorie dessert in and of itself. However, what I love most about it is that all the ingredients are nutrition power houses, so even just a small piece of this decadent cheesecake is enough to satisfy, (yet light enough not to make you feel overstuffed).
