My go-to breakfast is usually some oatmeal, with Greek yogurt and some kind of nuts and fresh fruit mixed in. But some mornings, if I've got the time, I'll cook a hot egg breakfast.
I absolutely LOVE eggs!!! They are so versatile, you can do anything with them, and they are perfect for breakfast, lunch, dinner, or snacks. They come with a bunch of nutrients and minerals that are beneficial to our bodies, and they are packed with protein. Those who are worried about the cholesterol found in egg yolks can simply remove them and stick with the white portion. I personally, love them whole and fresh! I'm lucky enough to have parents who live on a farm so I can get fresh farm eggs daily. (Truthfully, I get them about once a week). My father's chickens are free-range and of course, he doesn't use any chemicals or hormones. So I can be sure the eggs are safe. |
If you don't have easy access to farm fresh eggs like I do, you can still try to search for pasture-raised, free-range organic eggs at your grocery store. More and more stores are including them in their dairy sections, so have a look. They might be a little more pricey, but in my opinion they are worth it.
Anyway, here's a hearty and filling egg breakfast for you to try:
| For my toast, I used homemade whole wheat bread made in my bread machine. I found the recipe HERE at 100 Days of Real Food. |
