I enjoy spinach salads as a side dish, but if you add a bit of protein, it can become a quick, light meal. Simply add cooked shrimp and smoked salmon over top of a bed of baby spinach leaves. Add in a few sliced strawberries, cucumbers and a simple dressing made with olive oil, lemon juice, and fresh herbs. Voilá! It's quick, healthy and tasty. At the same time, it offers healthy fat from the olive oil, protein from the seafood, and plenty of vitamins and minerals from the fresh fruit and vegetables.
