I found this recipe on Pinterest, and was intrigued by the idea: pizza crust made out of cauliflower instead of bread! I wasn't sure how it would hold up to regular pizza, but when I looked at the ingredient list, I thought it couldn't hurt to try. The crust is only made up of the following ingredients:
- 1/2 head cauliflower, coarsely chopped
- 1/2 cup shredded Italian cheese blend
- 1/4 cup chopped fresh parsley
- 1 egg
- 1 teaspoon chopped garlic
- salt and ground black pepper to taste
Pretty simple ingredients, and I thought, hey, if it doesn't turn out, at least it will be some really tasty baked cauliflower. Well....the verdict is in and....it's DELICIOUS! It actually does hold together very well and makes a good base for your pizza. It's a little flimsy to hold - I needed two hands to prop it up to my mouth. After all, it is make out of steamed cauliflower, and not bread. But the extra care when holding a slice is worth the delicious taste. And what an excellent way to get in more veggies!
Once your crust is made, you can top it with anything you like. I topped mine with tomato sauce, Italian cheese blend (from Kraft), ham slices, mushrooms, red onion, black olives, and green pepper. So tasty! And it was actually quite filling, considering it was mainly a vegetable dish (apart from some cheese and ham slices).

Once your crust is made and you add your toppings, it only needs to go back into the oven for about 5-6 minutes, just until the cheese melts.
