I came home late from work and was pretty hungry so I wanted to make a quick meal. I opted for a mushroom and onion omelette, but wasn't sure it would be enough for dinner. I had some leftover chickpeas sitting in the fridge so I poured them into the cooking omelette. I added in some seasonings and tried (unsuccessfully) to flip the omelette onto my plate. You know, like the pros do. I'm no pro, and my omelette promptly broke into pieces. But I'm weird in that I like my food to look a little messy sometimes. Hence the name, "broken" omelette.
I took a bite just hoping it would be okay at least. But lo and behold, it was delicious. And it was totally filling. The whole meal took less than 5 minutes to prepare, so I'm pretty sure it's going to become one of my go-to quick meals. Try it out yourself and let me know what you think by leaving a comment below.
