One thing I've learned about zucchini this summer is that it goes really well with chocolate. These muffins combine both and are perfect for breakfast. Chocolate and vegetables for breakfast? Who knew? As an extra special bonus, if you want to turn these muffins into a dessert, you can drizzle on this easy honey and amaretto glaze. But I also decided to dress it up a little so that it can be used as a sweet dessert, by drizzling on some honey amaretto glaze. I got the idea when I went to Clovermead to buy some local, pure honey. If you are ever in the Southwestern Ontario area, you have to visit Clovermead! Not only is their honey delicious (and pure!), but they also have all these cool honey spreads. They basically just take their honey and mix it with different flavours. I tried:
- Honey Amaretto
- Honey Blueberry
- Honey Ginger
- Honey Cinnamon
- Honey Maple
