In a rare moment of bravery, I attempted to make a lasagna. I know that many people have made lasagnas with great success before, but in my family, making lasagna is a labour of love only my mother can perform. In truth, I just never tried it because I thought there were way too many steps involved. But I got this awesome pasta maker for Christmas that I've been dying to try out, and thought I should finally put it to use. I decided on making flat lasagna noodles for my first go with the machine (which meant I could just use the base unit and not any attachments). Now before you throw your hands up and say "I don't have 2 hours to spend in the kitchen on one meal," let me just say that I realize I could have saved a lot of time by doing a few things ahead of time. I think, if you wanted to make this dish quickly, you could probably do it by following these time-saving suggestions:
- Use store bought lasagna noodles (or make homemade noodles ahead of time)
- Make the meat/vegetable filling as well as the cheese filling ahead of time and keep in the fridge until you're ready to assemble.
- Use your own pre-made or store-bought sauce. Although, this cauliflower sauce is really the best part of the dish, and I recommend making that fresh.
The other thing to consider is that this recipe makes a large pan, and serves up to 10, depending on how big you cut your pieces. You can keep it in the fridge for up to a week, and it also freezes really well. So in the end, all the work is worth it in order to have some ready-to-go-meals on a busy night.
