I picked some Swiss chard from the garden yesterday. Actually, it was my brother’s garden, but apparently they have so much Swiss chard growing that they told my mom to pick it and use it. So she gave some to me. I’ll be honest, I’ve never had Swiss chard before, and I really didn’t know what to do with it. Did you know that Swiss chard “is one of the most nutritious vegetables around and ranks second only to spinach?” That’s according to the World’s Healthiest Foods website. Apparently, upon an extensive Google search (a.k.a. 5 minutes) I have discovered that Swiss chard is loaded with phytonutrients, antioxidants, Vitamins A, C, K, B complex, and a bunch of minerals. So I took a couple of big leaves home and thought, “you know, if I don’t end up eating them, I could always use them as a fan on really hot days.” Never mind. I have air conditioning for that. Instead I opted to eat some for breakfast this morning along with the potatoes, peppers and eggs I also brought home from the farm. Add in some homemade tortillas, local-grown onions and mushrooms, a little olive oil, fresh herbs, and seasonings, and you’ve got one very healthy (and very filling) breakfast! Check it out below.
