Fettuccine Carbonara with Summer Squash and Sausage:
Makes 4 servings
Ingredients:
- 250g of homemade pasta (see recipe HERE) or your favourite store-bought brand
- 6oz sausage (I used my parents' homemade pork sausage from their own farm-raised pork but you could use your own preferred meat. You could easily substitute ground turkey, chicken, or beef in this recipe.
- 1/2 cup chopped onion
- 1/4 cup chopped mushroom
- 1 cup shredded summer squash (yellow zucchini)
- 1/4 cup frozen or fresh green peas
- avocado oil (enough for sautéing, approx 1 tbsp) (You could substitute for your favourite cooking oil)
- 2 eggs
- 3 tbsp grated Parmesan cheese (I used my dad's homemade Parmesan)
- Fresh parsley and basil
Instructions:
