Ever since I learned how to make cauliflower alfredo sauce (see recipe HERE) I’ve been obsessed with cauliflower. I always used to consider it the most bland and boring vegetable out there. But now I look at it and oodles of tasty concoctions dance in my head. In addition to the aforementioned alfredo sauce, I’ve made cauliflower pizza crust (recipe HERE), and everyone knows about cauliflower mashed “potatoes.” I’ve been meaning to give cauliflower rice a whirl, ever since I’ve seen it popping up all over Pinterest. Substituting cauliflower for grains or starches is super easy because it’s such a versatile vegetable. It’s a flavor chameleon, and it holds up just as well as most grains. Plus, it has the added bonus of being super low in calories, so it doesn’t fill you up as much as bread, or potatoes, or rice. Another bonus? It doesn’t take nearly as long to cook! |
