My parents have harvested their potato plants. I've been waiting for them all summer, and I was told that there would be lots. Boy they weren't kidding!! I love potatoes! And I'm gonna have so much fun over the next few months making hearty vegetable soups, mashed and baked potatoes, and these crunchy potato chips! Potatoes are a very good source of vitamin B6 and a good source of potassium, copper, vitamin C, manganese, phosphorus, niacin, dietary fiber, and pantothenic acid. They are a hearty component to many vegetable soups. In fact, if you're a fan of creamy soups, but don't like adding in cream, add a few potatoes instead. When you puree the soup, the potatoes provide that creamy texture everyone loves - no need for cream! The best thing about potatoes is that they are available all year long, and the ways to use them are endless!
I chose to make BBQ chips since those have always been my favourite. But of course, you could dress these chips any way you like.
