It's gotten cold here in Southern Ontario all of a sudden. We've also had a flood of rain. Literally, streets have been flooded! But I guess I shouldn't complain too much. It's nothing like the dumping of snow that our friends in Calgary have gotten in the last few days! Seriously, snow??? In September???? Still, with the chillier temps it's a great time to enjoy a bowl of warm, hearty, chicken soup. I've already written about making roast chicken in the crock pot. I used some of the leftover chicken for this recipe as well as whatever vegetables I got from my garden and the farmer's market. I rounded out the meal with pot barley. This soup freezes nicely, so after making a large pot, I divided it up into individual containers to freeze, which will be easy to take out and thaw when I need a quick, hot and healthy meal.
