I don’t know what it is, but adding smoked salmon to anything always makes a dish feel much more posh to me. I feel like I’m eating at a spa or something. Then again, I’ve never eaten at a spa, so I really don’t know what that’s like. Okay so let's say this then: If I ever do eat at a spa some day, I imagine I might eat a meal kind of like this one.
This recipe doesn’t call for too much salmon, just about an ounce or two is enough to give this dish that smokey flavor. Overall this meal is packed with protein, healthy fats, and yummy fresh vegetables. It will fill you up, but at the same time is surprisingly light and very tasty. It would be great for breakfast or lunch.
