Okay guys, I’ve got a completely vegetarian meal to share with you today. Although I’m not vegetarian, I do look for ways that I can load up on a lot of vegetables in one go. Especially now that it is winter, and the produce I’m getting from the grocery store is likely not as nutrient dense as the fresh veggies I was getting in the summer, straight out of the garden. In an effort to load up on vegetables, I made this awesome meal. It’s a great vegetarian option, and it tastes so much like real spaghetti Bolognese. Ideally we would all just grow our own fruits and vegetables, with the next best option being to buy from local farmers as much as possible. But it’s winter and it’s not quite that simple. Sometimes you simply have no choice but to buy imported produce from your local supermarket. You do what you gotta do.
But in that case, it may mean that we need to eat even more fruits and vegetables than we normally would in an effort to get back some of those lost nutrients from deficient produce. The good news? If you’re loading up on so many more fruits and vegetables (imported or not), there might not be very much room left for processed foods in your daily meals. |
