Makes 10-12 fritters
Ingredients
- 3 cups grated zucchini
- 3 tbsp grated parmesan cheese (or more if you want a cheesier flavour)
- 2 eggs, beaten
- 4 tbsp whole wheat flour (I would add more the next time I make these)
- salt and pepper

Another zucchini recipe for you. This time, it's Zucchini Fritters, or, as I prefer to call them, Zucchini Pancakes. I found the recipe HERE. Truthfully, if I were to make them again, I think I'd cook them a little longer, add a bit more flour, and a lot more cheese. But overall, they are not bad, and are great as an alternative to a regular zucchini omelette. Zucchini Fritters Makes 10-12 fritters Ingredients
