Creamy Vegetable Soup

There's nothing I like more than a bowl of hot soup in the winter time.  It's the ultimate comfort food.  It's also a great way to get some extra vegetables in.  This soup is made entirely of vegetables.  It says "creamy" in the title, but there is no cream in it.  The thick and creamy part comes from pureeing the vegetables.

Homemade Ketchup

This homemade ketchup is awesome.  Really, it is.  It's almost like a tomato chutney, and can go with so many different things:  on fries, over burgers, on toast, over scrambled eggs... It's pretty versatile and so much healthier than the store-bought versions that are filled with high-fructose corn syrup, regular corn syrup, colourings, flavourings (whatever that means), etc.
You can make a bunch of this stuff and then store it in your refrigerator for a couple of weeks.  But I'm not sure it will last that long. It's so good, you're gonna want to be spreading it all over everything. Check out the recipe by clicking the title of this post or the "read more" button below.

After a Long Hiatus....

It's been a while since I posted....In fact, I haven't posted anything since August.  I've still been cooking, I just haven't had the time to take photos and post recipes.  I've also been sticking to a lot of my tried and true recipes, and haven't really had the time to be adventurous in the kitchen.  This school year is giving me a run for my money because I have a very low class, academically.  They are super nice kids, but I'm spending more time than usual trying to program and lesson plan to meet all the needs.

In any case, now that my report cards are done for another term, I'm feeling a bit more relaxed, and I've been slowly getting back to the kitchen.  As I've been rediscovering my love of cooking with fresh, local ingredients, I've been thinking I should probably start documenting these recipes again.  After all, that's what this blog is all about:  a chance for me to keep track of the healthy meals I learn to make.

Bacalhau à Brás

This was perhaps my favourite dish while traveling through Portugal, and one of the first ones I wanted to learn how to make.  It's another simple dish, (aren't all the best dishes really simple after all?) made with shreds of salted cod, scrambled eggs, and potatoes.  While I was in Portugal I heard it being referred to as the ultimate Portuguese comfort food.  In any case, I loved it!

Spanish Tortilla

I wrote in my last post about how I spent the past 5 weeks traveling (and ultimately eating) through Spain and Portugal.  I also mentioned that it would not be surprising to see some traditional Spanish and Portuguese recipes start to show up on this blog.  Well, as promised, here is the first one.
I saw this one everywhere in Spain.  It's a traditional tortilla (no, not the Mexican tortilla that we use here for wraps and burritos).  This is Spain's version of the omelette, and it is super simple to make.  It's found often at tapas bars, and makes a great snack.  I think it also happens to make a great breakfast too, which is exactly what I used it for here.

Cooking and Eating Through Spain and Portugal

So I know it's been a while since I've last posted...over 5 weeks to be exact.  But there's a good reason for that.  I was traveling through Portugal and Spain!  I had such a blast enjoying the gorgeous landscapes, beautiful weather, wonderful people...and of course...the amazing food!

Don't be surprised if you see a bunch of recipes over the next few weeks of some traditional Portuguese or Spanish dishes.  I

sampled a lot of them.  A lot!  And I also took a bunch of cooking classes so that I could learn how to make all of the wonderful food I got to eat.  It was such a fun experience and I can't wait to try out all of the recipes.

Light Apple, Walnut, and Goat Cheese Salad with Sweet Vinaigrette Dressing

Here's a quick, light, easy, healthy, and tasty salad for you.  I'm making use of the fresh greens that have been growing in my container garden.  Normally, I'm not a salad person, only because I don't like buying heads of lettuce in the grocery store.  They always taste so bland to me. 

But not so with fresh garden greens.  There is nothing quite like picking a few fresh leaves and eating them right away.  They still have that fresh, earthy taste.  And with a simple, homemade vinaigrette dressing like the one I have here, they taste even better!

It is that time of year when asparagus is in-season.  Who doesn’t love the earthy, al dente crunch of a fresh, lightly seared asparagus stalk?  It’s loaded with health benefits, and it is totally versatile.  I’ll have two recipes for you this week, which use up some of the fresh asparagus my parents have growing in their garden.  The second will be an asparagus and sweet potato omelette.  (Look out for it later in the week).
