I think I'm going to have to make a post of just muffins. I realize I may have more muffin recipes than anything else on this site. In fact, I may just be a little bit obsessed with muffins. It's either that or muffins are really the only baked good I can't seem to screw up. I tried making cookies last night....way too dry. I won't even bother trying to bake a cake - the thought scares me. And bars? Well, let's just say I can get the batter ready, but trying to turn them into bars ends up being one gloppy (although yummy) mess. Muffins on the other hand, is something I can tackle with one hand behind my back. Well, maybe not. But it's getting pretty close. If you've been following this blog at all, you know I like to throw in a good, healthy muffin recipe every once in a while. And you would also notice, I like to throw vegetables into my muffin recipes wherever I can. So here's another one for you. These are whole wheat carrot muffins with raw cacao nibs.
