If you’ve been following this blog at all, you know that I started my own vegetable garden this year in an attempt to have more fresh, locally grown produce. And you would also know that since starting my garden, I’ve had zucchini growing out of my ears! Well, actually, it's been growing out of the ground…in huge amounts! Almost every other day it seems that I’m bringing a handful of ripe summer squash into the kitchen and wondering what to do with it.

So I took her advice. She may be 12, but she’s a smarty pants, so I’ll listen to her. I decided to take her “bake this one” advice first, and made these tasty little baked zucchini chips. I've been seeing them all over Pinterest and wanted to try it out. They are super easy. That’s another thing you’ll notice if you’ve been following this blog. I really love me some super easy recipes.

A mandolin slicer if you have one. Though I don’t and used a knife instead.
