How old is too old to lick the batter when baking? Um, because I just totally did that… with the batter from this awesome cake. Since my garden is STILL producing copious amounts of zucchini and summer squash, I am still on the look out for new recipes to use them up. I decided to turn my attention to the dessert realm, and was a little doubtful that I’d be able to find something. Until I came across this heavenly concoction. As with many of the recipes I post on this blog, I didn’t come up with this one off the top of my head. I used THIS original recipe from Epicurious as a base. But then I did some of my own modifications to suit my specific tastes and preferences. The main changes I made were swapping coconut oil for the vegetable oil, and using my own homemade butter and buttermilk (see my post for how I made both of those). Oh yeah, and I also used pure honey rather than sugar in my recipe.
This cake is moist, tasty, chocolatey without being too sweet, and filling! And that batter I was raving about? It tastes like coconut chocolate pudding! Seriously... SO yummy! Enjoy!
