I've been posting a lot of desserts and snacks lately, so I thought I'd post a quick, light meal that can be eaten on it's own, or as a side dish. This one uses up some of the broccoli I froze from the garden this summer, plus some of my Dad's homemade Parmesan cheese, a little bit of olive oil, raisins, and my favourite, chickpeas! In any case, the reason I wanted to freeze those vegetables was so that I could enjoy them in the colder months, so that's exactly what I intend to do. It's sad to see my freezer get emptier and emptier, but there is no point in keeping those vegetables in there, and not enjoying them.
- In a small saucepan over medium heat, place broccoli and about 2 tbsp water. Cover, and let broccoli steam for about 2 minutes.
- Add olive oil, garlic, raisins and chickpeas. Saute until chickpeas are warmed (about 3-5 minutes)
- Sprinkle Parmesan cheese over top and mix. Transfer to a plate and enjoy.
