So I figured I should just continue with the sweet potato love fest while I continue to find new ways to use these awesome super-food root vegetables. This time I decided to use them in muffins. These make a great little snack or breakfast food. They are not too sweet or too dense, and were pretty easy to make.

Anyway, even though I don't know if I will ever be considered a "baker," I do find that muffins are a good way to ease into the baking world. It's really hard to mess up a muffin mix. It's pretty straight-forward. You just mix your dry ingredients in one bowl, the wet ingredients in another, and mix them together. Pour the batter into muffin tins, bake them until a fork inserted into the middle comes out clean and you're done. It's pretty simple.
Sweet Potato Oatmeal Muffins
**You can cook sweet potatoes ahead of time by piercing with a fork, and baking in a 425 degree F. oven for 45 minutes.**
